The astringent taste of mung beans helps tone your digestive organs, restore your digestive fire (agni) and they can even help you restore your bowel movements. Here’s an easy mung soup recipe for you, enjoy it any day, its perfect for a light dinner or even lunch, and even when you are not feeling very well.

You’ll need:

2 cups of cooked mung beans

4 cups of homemade broth or water

1 tablespoon of miso

2 cups of spinach

Toppings: pumpkin seeds, sunflower seeds, soy sauce

Method

Put the mung beans and the broth into a pot and bring it to boil. Add the spinach and simmer for 2 more minutes. Cover and remove from heat. Put a little bit of the broth into a bowl and ad the miso, mix it until well blended.

Divide the miso mix into 2 bowls and server the soup. You can blend it or just have it directly from the pot.

Sprinkle the toasted seeds on top, for extra creamy flavour, add some coconut mil and nutritional yeast. Enjoy!
